If I am in need of a comforting, quick and easy weeknight meal, this is one of my go to recipes. It is very hearty, and a crowd pleaser for sure. It is also an extremely flexible recipe, which is another HUGE plus. Feel free to mix it up. Don’t like mushrooms? Leave them out. Looking for more of a breakfast dish? Add some scrambled eggs. Like I said…super flexible, and so easy to throw together. It is just one of those dishes that will make your tummy smile.
First I start by browning up my sausage
Then I start chopping my veggies.
We like to add peppers, onions, and mushrooms
Now, I add the chopped veggies to the browning sausage
Now comes the super scrumptious, yummy in my tummy part…add the cream cheese to the mixture.
Let the cream cheese melt into the mixture.
Now it’s time to prep our crescent roll sheet.
Spread the roll into your pan or baking dish, and bake on 375 for 10 minutes. I use a 13×9 baking dish. Do not grease or spray your pan. I cannot emphasize this enough. Trust me, this will only make the crescent roll a soggy mess which equals not yummy.
Now add the sausage mixture to the mostly cooked crescent sheet, and top with cheese.
Bake for another 5-7 minutes, or until cheese is melted and crescent roll sides are slightly golden.
Allow to cool for a few minutes, and cut the casserole into 8 pieces. I like to garnish with green onions. I also like to serve such a hearty meal with a light and simple salad. I truly hope you enjoy this recipe as much as my family does. Happy eating! XO
Cheesy Sausage and Veggie Casserole
1 lb sausage
6 mushrooms, stems removed
½ bell pepper
8 oz. package cream cheese
1 crescent roll sheet
2 cups shredded cheese; Colby jack or cheddar
3 green onions, chopped including white ends; optional
Brown sausage in pan on medium high heat. While browning chop onions, peppers, and mushrooms. Add veggies to sausage. Once sausage and veggies are cooked through add the cream cheese. Stir the cream cheese into the sausage and veggie mixture. While the cream cheese is melting preheat oven to 375. Spread crescent roll sheet into 13×9 baking dish. Bake crescent roll sheet for 10 minutes. Spread sausage mixture onto crescent roll sheet, and top with shredded cheese. Bake for another 5-7 minutes, or until cheese is melted and crescent roll sheet edges are slightly golden. Allow casserole to cool for 5 minutes. Slice casserole into 8 pieces. Garnish with green onions. Enjoy!
