Irish Pub Nachos

I created these on a whim, and my GOSH they are AMAZING! These Irish Pub Nachos have the yumminess of shepherd’s pie, but kick it up to next level appetizer status!

You should definitely make this appetizer for your next party, get together, or watching the big game. Trust me, EVERYONE will be your new bestie! 😉

First things first…steak fries! No, steak fries are not my most favorite french fry in the entire world…in fact they rank pretty low for me on the hierarchy of fries. BUT, they are a MUST for the Irish Pub Nachos!

I have tried other options, but no other fry compares to the wonder that is steak fries in this recipe. They hold up perfectly, and can handle ALL the meaty gravy goodness! Annnddd rant over! 😉

While your fries are cooking (I suggest cooking for 5-10 minutes longer then suggested to crisp them up a bit), go ahead and start your meat. Add the garlic and onion powder to the browning meat, and then add the peas and carrots.

Next you will add the Worchestershire, ketchup, and thyme. Once that is mixed really well, and the meat has finished browning, add the flour.

Now it’s time to make the gravy deliciousness! Add the chicken broth to the meat, and let simmer and reduce for about 10 minutes.

It should look something like this.

Once the fries are ready, top with the meat mixture and shredded cheese.

Place back in the oven, and bake on 350 for 5-10 minutes. You really are just looking for melted cheese yumminess.

Let the Irish Pub Nachos sit for about 5 minutes, and then you are ready to serve! We love to top ours with sour cream, tomatoes, and green onions.

Irish Pub Nachos


  • 1 bag Steak Fries
  • 1 1/2 lbs lean ground beef
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 cup frozen peas and carrots blend
  • 1 Tsp dried thyme
  • 1 Tbsp Worschestershire
  • 1 Tbsp ketchup
  • 2 Tbsp All purpose flour
  • 1 cup chicken broth
  • 2 cups shredded Colby Jack
  • sour cream, tomatoes, green onions optional garnish


  1. Preheat oven to bake steak fries. I suggest baking the steak fries 5-10 minutes longer than the suggested time.

  2. Start browning your meat, and add the garlic and onion powder.

  3. Next add the peas and carrots and the thyme.

  4. Once meat is almost browned, add the Worchestershire and ketchup. Mix well.

  5. Add the flour to the meat mixture, and mix well.

  6. Add the chicken broth to the meat mixture to make the gravy. Simmer and reduce to thicken the gravy.

  7. Once fries are done baking, drop the oven temp to 350.

  8. Place meat mixture on top of fries, and add shredded cheese.

  9. Place in the oven and bake 5-10 minutes, or until cheese is melted.

  10. Let Irish Pub Nachos sit for at least 5 minutes.

  11. Garnish with sour cream, tomatoes, and green onions. Enjoy!
