Casseroles are the ultimate comfort food! And, this sausage casserole is no exception! Packed with sausage, tons of melted cheese, and the oh so buttery soft crust. You and your family are going to devour this dish.

Oh, and did I mention that it is oh so easy to make too?

Don’t you love a great casserole? I mean they basically are a big ole hug in a casserole dish!

And, if you are like me than you are always on the hunt for quick and easy recipes. Bonus points if it is a make ahead and freezer friendly dish! PS This one is both! 😉

What is a breakfast casserole?

A breakfast casserole takes all of the amazingness that is breakfast. Mixes it all up. And, out comes delicious breakfast perfection. In one dish!

Say whaaatttt? You mean, I don’t have to run around the kitchen like a madwoman, dripping with sweat, while all of the stove burners are going at once? Nope! Not with the amazingness that is this easy breakfast sausage casserole!

We are talking sausage, crescent rolls, and cheese. Oh for the love of all that is cheesiness! This casserole recipe is ALL about the cheese. Where are my cheese lovers at?

AND, you even get to sneak in some veggies too! Trust me, the kids will not notice. #momwin

Sausage Casserole For A Crowd

This casserole has been made for just our family, and for 50 people. When, I say this bad boy can feed a crowd I am not messing around!

This recipe makes for the perfect Christmas morning breakfast casserole too! Because frankly, you have plenty of other things to worry about on Christmas morning than breakfast.

And, we all know that despite the fact that you have been furiously spreading holiday spirit all over the place, AND are exhausted! Everyone will still be hungry, and will let you know about their hunger about a bajillion times. So, for sanity sake make this casserole!

Although I call this a breakfast casserole, it is also perfect for brunch. Oh, and don’t even begin to think that I don’t also make this for dinner all the time too.

It is one of the things that makes this sausage casserole amazing! Well that, and the fact that it is delicious. 😉

This recipe will yield about 12 slices or 4-6 servings. All you need to do is double or triple the recipe to keep those hungry crowds happy!

Make Ahead Casserole Tips

Another one of the reasons that I LOVE this recipe is that it is a super easy make ahead casserole!

One of my favorite tips is to purchase some disposable aluminum pans. And, make a few of this sausage casserole at once. Oh my gosh this recipe freezes like a charm!

And, don’t worry. We will walk through the recipe, and I will let you know at what step to freeze it. I always got your back!

Easy Breakfast Sausage Casserole Recipe

I think you will agree that this is an incredibly easy casserole recipe. No mixing, no fuss. Just brown some ingredients and bake!

Are you ready to make this amazing dish? Let’s do this!

First you will start by browning up your sausage.  Next you will add some chopped veggies. I like to use peppers, onions, and mushrooms.

But, feel free to add any veggies or leave some off. This breakfast casserole is super flexible. So, mix it up however your heart desires!

While the sausage mixture is cooking, get your oven preheating to 375. Next, start pressing the crescent sheet or crescent roll into the bottom of your pan. Do not spray your baking dish or pan!

Bake the crescent sheet for about 10 minutes. You want to have this mostly cooked through.

Then, you will add some cream cheese to the sausage mixture. Make sure the cheese has completely melted, and everything is mixed well. Now, the crescent sheet should be just about finished cooking.

Simply spread the sausage mixture on top of the crescent sheet. If you want to add scrambled eggs to the casserole add them at this step.

Make ahead casserole tip: Stop at this step, and freeze the casserole. When you are ready to bake follow the next steps. (See I told you I had your back!)

Next you will top the sausage casserole with cheese, and bake for another 5-7 minutes. You’re looking for throughly melted cheesy goodness, and for the crescent sheet to be slightly golden.

Allow the casserole to sit for a few minutes. Yes, it is hard to wait, but try to maintain. Cut into 12 slices, serve, and ENJOY!

I like to top mine with a few green onions too. So feel free to garnish yours too!

Ingredients

Scale

1 lb breakfast sausage

1/2 medium yellow onion, chopped

6 baby bella or button mushrooms, chopped

1/2 bell pepper, chopped

8 oz cream cheese

1 crescent roll sheet or crescent roll can

2 cups colby jack or cheddar cheese, shredded

Optional garnish – 3 green onions, chopped


Instructions

  1. Preheat oven according to crescent sheet or crescent roll directions.
  2. Brown sausage and veggies in pan on medium heat.
  3. Spread and press crescent sheet into 13×9 pan. DO NOT grease or spray pan!
  4. Bake crescent sheet for 10 minutes.
  5. Once sausage mixture is finished cooking, add in the cream cheese.
  6. Allow cream cheese to melt, and mix thoroughly.
  7. Once crescent sheet is finished baking, add sausage mixture to crescent sheet.
  8. Top sausage casserole with shredded cheese.
  9. Place casserole back in oven, and bake for another 5-7 minutes. Or until cheese is melted, and crust is golden.
  10. Allow the sausage breakfast casserole to rest for about 5 minutes.
  11. Cut into 12 slices, and garnish with green onions.

Notes

Feel free to mix up the veggies, and add eggs if you want!
