Turkey Enchilada Casserole will soon be a family favorite of yours. Made with fresh ingredients layered into a casserole dish, it’s a quick & easy meal the whole family will love.

- 1 lb ground turkey
- 1 can Old El Paso Enchilada sauce
- 1–2 cups of veggies of your choice
- 1 can black beans
- 1 cup cheese
- 12+ corn tortillas
Instructions
- Pre-heat your oven to 350 degrees.
- Start by placing your ground turkey into a skillet over medium-high heat.
- Cook the turkey for 5 minutes until it starts to brown.
- Add your veggies of choice into the mix and continue cooking.
- Drain and rinse the black beans and add to the turkey mix.
- Add in the enchilada sauce to the turkey and beans and simmer for 5 minutes.
- In a 11x 9 casserole dish, coat the bottom with a layer of enchilada sauce and layer the corn tortillas on the bottom covering the dish.
- Pour in the turkey mixture on top of the corn tortillas into the dish.
- Layer the top of the mixture with corn tortillas and add more enchilada sauce on top.
- Top the entire dish with cheese.
- Bake in the oven for 5-10 minutes or until the cheese melts.
