Turkey Enchilada Casserole


Description

Turkey Enchilada Casserole will soon be a family favorite of yours. Made with fresh ingredients layered into a casserole dish, it’s a quick & easy meal the whole family will love.


Ingredients

  • 1 lb ground turkey
  • 1 can Old El Paso Enchilada sauce
  • 12 cups of veggies of your choice
  • 1 can black beans
  • 1 cup cheese
  • 12+ corn tortillas

Instructions

  1. Pre-heat your oven to 350 degrees.
  2. Start by placing your ground turkey into a skillet over medium-high heat.
  3. Cook the turkey for 5 minutes until it starts to brown.
  4. Add your veggies of choice into the mix and continue cooking.
  5. Drain and rinse the black beans and add to the turkey mix.
  6. Add in the enchilada sauce to the turkey and beans and simmer for 5 minutes.
  7. In a 11x 9 casserole dish, coat the bottom with a layer of enchilada sauce and layer the corn tortillas on the bottom covering the dish.
  8. Pour in the turkey mixture on top of the corn tortillas into the dish.
  9. Layer the top of the mixture with corn tortillas and add more enchilada sauce on top.
  10. Top the entire dish with cheese.
  11. Bake in the oven for 5-10 minutes or until the cheese melts.
