- 1 LB ground beef or meat of choice
- 1 TBS olive oil
- 1 medium onion
- 1 can black beans
- 1 frozen bag cauliflower rice
- Taco seasoning
- Salt & pepper to taste
- 6–8 tortillas
- 1 cup shredded cheese of your choice
- salsa for serving
- guacamole for serving
- Lettuce, sour cream, chopped chives, tomatoes *Toppings of your choice
Instructions
- Pre-heat oven to 400F and line baking sheet with parchment paper.
- Using a skillet, add 1 lb ground beef, 1 TBS olive oil and 1 small chopped onion. Sauté over medium high heat, stirring few times and breaking the meat into small pieces.
- Next, add the taco seasoning or spice of your choice and continue to sauté until ground beef is browned, about 7-10 minutes. Drain and place in a separate bowl.
- Warm a tortilla and place on a plate. Add about a 1/2 cup of the ground beef mixture onto the center. Add cauliflower rice, beans, and cheese.
- Assemble the Chimichanga by folding the right and left sides over, then rolling to close.
- Place on the baking sheet with the seam side down. Spray the top with cooking spray or olive oil.
- Bake for 15-20 minutes or until top of chimichangas turn golden brown color.
- Serve the baked Chimichangas with your choice of toppings: Rice, salsa, guacamole, lettuce, tomatoes, or chopped chives. ENJOY!
