What is a Chimichanga?

A Chimichanga is a  deep-fried burrito. Typically it will features a flour tortilla filled with rice, beans, cheese, and meat, then rolled up and fried or baked.

There are many meat options you can choose from:

  • Carne asada
  • Barbacoa
  • Ground beef
  • Shredded chicken
  • Or swap for a vegetarian option

What do you serve with Chimichangas?

You can serve chimichangas with a variety of Mexican side dishes. Chimichangas are traditionally served with lettuce, tomatoes, guacamole, salsa, chipped chives and/or sour cream. Don’t forget a heaping pile of rice and beans.

How do I freeze/reheat Chimichangas?

To freeze: Freeze in an air tight container or zip lock bag for up to 2 months.

To reheat: Thaw the Chimichangas and place in the oven at 400 degrees for 20-25 minutes until heated through.

Air fryer, thaw completely and air fry at 350 degrees for 5 minutes.

Ingredients needed for Chimichangas

  • Ground beef
  • Olive oil
  • Refried beans
  • Onion
  • Cauliflower rice (frozen)
  • Burrito size tortillas
  • Salsa
  • Spices: Garlic powder, onion powder, chili powder, salt & pepper OR Taco seasoning of you choice.
  • Toppings: shredded lettuce, tomtates, chipped chives, sour cream, and/or gaucamole

How to make Beef Chimichangas?

Pre-heat the oven at 400 degrees and line a baking sheet with parchment paper.

In a skillet over medium-high heat, add 1 TBS of olive oil, ground beef, and a chopped onion.

Add the spices or taco seasoning to the ground beef mix

Sautee the meat over medium high heat, breaking the meat up with a wooden spoon.

Sautee until meat is browned and onions are translucent. Drain the excess liquid and place in a separate bowl.

Microwave the frozen cauliflower rice.

Open the can of beans and place into a small container.

Place a warm tortilla on a plate and add the meat, beans, cheese, and cauliflower rice into the shell.

Roll the Chimichanga by folding left and right side of the tortilla over the filling, then fold the top and bottom sides of the tortilla.

Place on the baking sheet with the seam side down and spray the top with cooking spray or with olive oil.

Bake in the oven at 400 degrees for 15-20 minutes or until the tops are crispy golden brown.

Serve with your choice of toppings such as lettuce, sour cream, chopped chives, tomatoes, salsa, rice, and/or guacamole. ENJOY!

Ingredients

  • 1 LB ground beef or meat of choice
  • 1 TBS olive oil
  • 1 medium onion
  • 1 can black beans
  • 1 frozen bag cauliflower rice
  • Taco seasoning
  • Salt & pepper to taste
  • 68 tortillas
  • 1 cup shredded cheese of your choice
  • salsa for serving
  • guacamole for serving
  • Lettuce, sour cream, chopped chives, tomatoes *Toppings of your choice

Instructions

  1. Pre-heat oven to 400F and line baking sheet with parchment paper.
  2. Using a skillet, add 1 lb ground beef, 1 TBS olive oil and 1 small chopped onion. Sauté over medium high heat, stirring few times and breaking the meat into small pieces.
  3. Next, add the taco seasoning or spice of your choice and continue to sauté until ground beef is browned, about 7-10 minutes. Drain and place in a separate bowl.
  4. Warm a tortilla and place on a plate. Add about a 1/2 cup of the ground beef mixture onto the center. Add cauliflower rice, beans, and cheese.
  5. Assemble the Chimichanga by folding the right and left sides over, then rolling to close.
  6. Place on the baking sheet with the seam side down. Spray the top with cooking spray or olive oil.
  7.  Bake for 15-20 minutes or until top of chimichangas turn golden brown color.
  8. Serve the baked Chimichangas with your choice of toppings: Rice, salsa, guacamole, lettuce, tomatoes, or chopped chives. ENJOY!
