Low Carb Enchilada Skillet


Enjoy this enchilada skillet that is so flavorful you won’t even know it’s low carb! 


  • 16 oz ground chicken, turkey, or beef 
  • 1 tbs EVOO
  • 1 cup chopped zucchini
  • 1 can enchilada sauce 
  • 1 can black beans 
  • 1 tsp garlic powder
  • 1 tsp onion powder 
  • salt & pepper to taste


  1. In a medium-hot skillet, add 1 tbs of olive oil.
  2. Place the 1 lb ground chicken into the pan with the olive oil.
  3. Spice it up with garlic powder, onion powder, salt & pepper to taste
  4. While that is cooking, dice up 1 cup (2 medium) zucchini.
  5. Drain & rinse the can of black beans
  6. Add the black beans, can of enchilada sauce, and zucchini to the cooked chicken.
  7. Mix well and simmer for 5-10 minutes
  8. Enjoy!
