Enjoy this enchilada skillet that is so flavorful you won’t even know it’s low carb!
Ingredients

- 16 oz ground chicken, turkey, or beef
- 1 tbs EVOO
- 1 cup chopped zucchini
- 1 can enchilada sauce
- 1 can black beans
- 1 tsp garlic powder
- 1 tsp onion powder
- salt & pepper to taste
Instructions
- In a medium-hot skillet, add 1 tbs of olive oil.
- Place the 1 lb ground chicken into the pan with the olive oil.
- Spice it up with garlic powder, onion powder, salt & pepper to taste
- While that is cooking, dice up 1 cup (2 medium) zucchini.
- Drain & rinse the can of black beans
- Add the black beans, can of enchilada sauce, and zucchini to the cooked chicken.
- Mix well and simmer for 5-10 minutes
- Enjoy!
