Low Carb Enchilada Skillet

My family loves this low carb and freezer friendly chicken enchilada skillet.

What you need for this recipe:

  • Olive oil
  • Ground chicken
  • Zucchini
  • Black beans
  • Enchilada sauce
  • Garlic powder
  • Onion powder

Let’s Make the Enchilada Skillet :

  1. In a medium-hot skillet, add 1 tbs of olive oil.
  2. Place the 1 lb ground chicken into the pan with the olive oil.
  3. Spice it up with garlic powder, onion powder, salt & pepper to taste.
  4. While that is cooking, dice up 1 cup (2 medium) zucchini.
  5. Drain & rinse the can of black beans.
  6. Add the black beans, can of enchilada sauce, and zucchini to the cooked chicken.
  7. Mix well and simmer for 5-10 minutes.
  8. Enjoy!

Storage tips:

Store in the fridge for up to 3-4 days OR you can let it cool, put into containers and store in the freezer for up to 2 months.

How can I make this fit a low carb/keto diet?

There are a few swaps to make this fit a keto diet. Change the chicken to beef or a higher fat cut of meat. Add cheese and/sour cream as an additional topping.

You can also sub out the beans depending on your carb needs.

Description

Enjoy this enchilada skillet that is so flavorful you won’t even know it’s low carb! 


Ingredients

  • 16 oz ground chicken, turkey, or beef 
  • 1 tbs EVOO
  • 1 cup chopped zucchini
  • 1 can enchilada sauce 
  • 1 can black beans 
  • 1 tsp garlic powder
  • 1 tsp onion powder 
  • salt & pepper to taste
