One of the wonderful things about this recipe is that you probably have most of the ingredients on hand! Which is a wonderful last minute dinner superhero of a recipe.

It is also perfect if you are a planner and meal prepper. If you know that you are going to have a particularly busy day, or you won’t be arriving home until later than usual. Make this chicken enchilada soup! Can you ever go wrong with a recipe that takes 20 minutes?

How To Make Chicken Enchilada Soup

One of the things that you will absolutely love about this soup recipe is that it ridiculously easy. You basically throw everything in a pot, let it come up to a boil. And then simmer for a few minutes!

It is pretty much fool proof!

My biggest tips for the recipe are to make sure that the cream of chicken soup really breaks down all the way. You want that yumminess to get to its melty creamy sweet spot.

I also add in the chicken at about the 10 minute spot. You are really just looking to warm it up, and not actually cook it.

And, one note about the cheese. I have actually added the cheese to the chicken enchilada soup two different ways. You can  add it to the entire soup pot, and stir it until it melts. Or, you can add it to each individual bowl of soup depending on individual preference. Each way is delicious, and you can’t go wrong! So, do whatever you think will work best for your family.

Ingredients

Scale
  • 2 cans (10.75 oz) cream of condensed chicken soup
  • 1 10 oz can of enchilada sauce – I love La Orden
  • 1 15 oz can black beans – rinsed
  • 1 c frozen corn
  • 11 1/2 c water
  • 2 c oven roasted chicken
  • 2 c shredded cheddar or colby jack cheese

Optional garnish:

  • avocado sliced
  • tomato
  • green onions
  • onions
  • cilantro
  • sour cream
  • tortilla strips

Instructions

  1. Add the cream of chicken soup, enchilada sauce, black beans, corn, and water to pot.
  2. Bring all ingredients to a boil, and make sure that the cream of chicken soup is melted.
  3. Stir as needed.
  4. Once all ingredients have melted to creamy consistency, and are mixed well cut heat to allow soup to simmer.
  5. Add in chicken, and cook for an additional 10 minutes.
  6. Once soup has finished cooking, add in the cheese and stir well.
  7. The cheese will melt from the heat of the soup.
  8. Add soup to bowls, and add any garnish you like!

Notes

You can either add the cheese to the entire pot of soup. Or, add it to the individual bowls of soup. Both work really well, and are equally delicious!
