Quick And Easy Black Bean Tostadas – Meatless Monday Meal

I don’t know about you, but Mondays can be really hard for me…especially when it comes to making dinner. One of my go to meals are these quick and easy black bean tostadas!
Seriously y’all, these tostadas are so good. Even my wonderful husband, who is not let’s say the most meatless open minded individual, loves them.
These black bean tostadas are super easy to make, and incredibly filling. Which in my book, is a winner every time.

Before we begin, allow me to sing the praises of my Blendtec. This is seriously the BEST blender ever!

Quick and Easy Black Bean Tostadas
Begin by rinsing your black beans.
Next, you will put the olive oil and lime juice in the blender

Please ignore the lovely wallpaper…I have been patiently awaiting a full kitchen remodel. BUT, that is a different conversation for another day. 😉
Then add garlic, if you are like me then you add lots of garlic.
I have a mild obsession with garlic, and it must go in EVERYTHING! Okay maybe not ice cream, but you get the idea.
Add the beans and spices, and mix everything until it has more of a dip consistency. Not sure if that is really a thing, but in my kitchen it is. 😉

Now it’s time to get cooking.
Just add beans and cheese on the tostadas. I personally add onions at this time too, but you do whatever works best for you.
Bake on 350 for 5-7 minutes, or until cheese is nice and melted.
Feel free to add toppings after the black bean tostadas are finished baking. We like green onions, tomatoes, lettuce, salsa, cilantro, and avocado.
These black bean tostadas are SO easy, and super delicious! This is the perfect meal on those super busy days, or for when you just really aren’t feeling it…if you know what I mean! 😉

Description
These black bean tostadas are a quick and easy meal perfect for vegetarians, and meat eaters alike! These black bean tostadas are fresh and filling, and whip up in mere minutes!
Ingredients
- 4 tbsp Extra Virgin Olive Oil
- 4 tbsp Lime Juice
- 6 cloves Garlic
- 2 cans Black Beans (Rinsed and drained)
- 1 tbsp Onion Powder
- 1 tbsp Cumin
- 1 tbsp Chili Powder
- 1 tsp Cayenne
- 2 c Shredded Cheese
- 12 Tostada Shells
Instructions
- Preheat oven to 350.
- Place olive oil, lime juice, beans, and spices in blender.
- Blend until mixture reaches a dip like consistency.
- Spread bean dip onto tostadas, and top with cheese.
- Bake for 5-10 minutes, or until cheese has melted.
- Feel free to top with cilantro, onion, tomato, avocado, sour cream, and salsa.
- Enjoy!
