I have got an incredibly easy and amazing dessert for your mermaid loving little one!
So, my daughter is next level obsessed with mermaids!
I think this is for two reasons:
1. This Summer, she became much more comfortable in the pool.
2. Mermaids ROCK!
And keeping it real…I ain’t mad about it! 😉

I love all things fantastical, magical, and sparkly too! And, you can always count me in if there is creamy chocolate goodness involved. 😉
So, I put on my creative thinking cap, and got to mermaid dessert creation work!
Side note: This Summer has been incredibly hot. Meaning if we are outside then it’s in the pool, and if we are inside…this mama is not jumping for joy to turn on the oven.
Speaking of hot, I also created this Mermaid Lemonade recipe! It is super easy to make, and is refreshingly delicious too!
Thus, the white chocolate mermaid bark recipe was born! It is SO easy to make. Like all you need is a microwave easy! That is a winner in my book every time!

This recipe is the most amazingly easy and colorful dessert ever!
All you do is add teal, green, and purple food color to white chocolatey goodness. And then top it with candy sprinkles.
I mean, what is not to love?
I genuinely cannot stop staring at this sparkly and colorful candy creation!
As I said, it has been SO hot here! And this mermaid bark recipe makes for a perfect pool side treat too.
We have been thoroughly enjoying all of the shimmery mermaid goodness on our swim breaks.
This recipe would be such a precious treat for your child’s birthday party too! You could make it as a treat for everyone to eat at the party, or even to go in the party favor bags!
I have been handing out this mermaid bark candy to my daughter’s friends, and let’s just say they lost their minds!
And, it was all gone is seconds!
PRO TIP: Make extra and store it in the freezer! This white chocolate mermaid bark will ‘technically’ last forever in the freezer, but it will be gobbled up in a few days. 😉
White Chocolate Mermaid Bark Ingredients
Sugar Sprinkles – I used these Purple Sugar Sprinkles
Under the Sea Candyfetti – Feel free to use whatever sprinkles your heart desires. I thought these were absolutely perfect for this Mermaid Bark recipe.
Edible Icing Colors or Edible Food Coloring – Personal thoughts on Icing Colors vs Food Coloring. I love icing colors depth and richness of color, and I always have it on hand for my frosting and icing creations.
With that said, I probably would have preferred food coloring for this dessert recipe as it would have been easier to dispense.
But, this is not a major deal. So you do whichever works best for you!
White Chocolate Mermaid Bark Supplies
Skewers for Marbling
Baking Sheet
Silpat or Parchment Paper
3 Small mixing bowls
Spoon or Spreading Knife

White Chocolate Mermaid Bark Instructions
Divide candy melts into 3 bowls. Microwave in 30 second intervals until completely melted. Stir frequently.
Once completely melted add icing color or food coloring to each bowl, and stir to mix.
Now you will spoon out each color onto your baking sheet with parchment paper.
Leave approximately 2-3 spoonfuls of each color remaining in the bowls.
There is no specific pattern here. Go crazy!
Once you are finished adding the colors, spread with a spoon or knife.
I am super fancy, so I used a spoon. 😉
Next add the remaining candy melts in small spoonfuls to the spread.
Again, there is no ‘right’ way to do this! Once of the many reasons why I love this easy dessert recipe! 😉
So, go crazy! Unlike haircuts and wardrobe choices…you cannot screw this up!
Now, get your marble and swirl on! Take your skewers and get to swirling.
You can move the skewer back and forth for a more marbleized look.
Next, add the Purple sugar sprinkles and the Under the Sea Candyfetti.
Feel free to add any color sugar sprinkles, disco dust, or larger sprinkles!
I just went with Teal, Green, and Purple for this recipe, because it felt the most mermaid-ey to me. Yes ‘mermaid-ey IS a word! I just said it, so it’s real!
Freeze for one hour. Then, break apart the mermaid bark.
Finally, step back and admire your delicious mermaid bark dessert creation!
Ooohhh and Ahhh because this is some seriously gorgeous stuff!

Description
White chocolate Mermaid bark is a colorful, and easy dessert recipe that is perfect for a mermaid themed birthday party! Using only 3 ingredients, this chocolate bark is super easy to make!
Ingredients
- 12 oz White Candy Melts
- 3 different colors of Icing Color or Food Color
- Candyfetti and Candy Sprinkles
Instructions
- Divide candy melts into each bowl.
- Microwave in 30 second intervals, until completely melted. Stirring frequently in between intervals.
- Add one color to one bowl of melted chocolate, and stir.
- Place parchment paper onto baking sheet.
- Spoon all but 2-3 spoonfuls from each bowl onto parchment paper.
- Spread the melted chocolate on your baking sheet.
- Add small spoonfuls of remains chocolate onto the spread.
- Swirl and marbleize with skewer.
- Add edible decorations to the melted chocolate spread.
- Freeze for one hour.
- Remove from freezer, and break the Mermaid Bark apart into small pieces.
