You will want ripe and juicy tomatoes when making your pico de gallo. Now, I love me some tomatoes, but all tomatoes are not created equal.
You want to make sure that the tomatoes have a nice color, and are firm with a little give. Also, be the weirdo who smells their food. Just kidding! If smelling your food is wrong, I don’t want to be right.
If it smells good, has a rich color and feels right…that’s the tomato for you! The perfect tomato helps to make all the pico de gallo yummy magic come together.
2. Cilantro and Onions
When making your pico de gallo, show it some cilantro and onion love. The onions provide such a lovely crunch, and the cilantro helps to make the pico de gallo taste super fresh!
3. The Lime
I will be the first to tell you that I am ALL about making recipes quick and easy. And, I will always have your back when it comes to shortcuts…a mamas gotta do what a mamas gotta do!
However, for this pico de gallo recipe, try to use fresh lime juice. The fresh lime juice genuinely makes a difference, and adds that extra burst of flavor!

4. Let it be
Once you have assembled and mixed all the ingredients for your pico de gallo, allow it to rest. The longer all those yummy juices have to marinate, the better.
Ideally, you should let the pico de gallo rest in the fridge for at least twenty minutes. I say ideally, because if you can make it the full twenty minutes without devouring this easy pico de gallo…let’s just say that you my friend, are amazing!Print
This easy pico de gallo recipe makes for the perfect salsa to serve at your next party or with a Mexican dish! Using fresh tomatoes, onions, cilantro, and lime juice this pico de gallo is delicious!
- 5–7 tomatoes (diced)
- 1/2 yellow onion (diced)
- 1/2 cup cilantro (finely chopped)
- 2–3 tbsp freshly squeezed lime juice
- salt (to taste)
- Once all ingredients are diced and chopped, add to bowl.
- Mix all ingredients. Season with salt, to taste.
- Cover and place in fridge, until you are ready to serve.
If you ‘can’ allow this pico de gallo to sit for at least a few hours. The longer the ingredients have to marinate together the better it will taste!
But, also know that if you feel compelled to immediately it the pico de gallo, I completely understand! It is so yummy, that it can be very difficult to resist!
