If you didn’t already notice, Mexican meals happen regularly in our home. I love coming up with easy meals that my whole family will love while taking the stress out of cooking to share with you.
Enchiladas are great but they can be tedious to make all the time. I took our family favorite recipe for turkey enchiladas and stripped it down to make into a casserole.
No more mess, easy clean up, and on the table in less than 30 minutes!
What you need to make Turkey Enchilada Casserole
- Turkey. I used ground turkey for this recipe but feel free to get creative with what you have. Shredded chicken, rotisserie chicken, or ground beef will all work great!
- Veggies. This is where you can pick veggies that your family enjoys. Zucchini, cauliflower rice, broccoli, peppers & onions. Really anything you enjoy goes with this!
- Beans. Pick up a can of any black beans of your choice for this recipe.
- Enchilada Sauce. You could make your own enchilada sauce, but who has time for that? I use Old El Paso Red Enchilada sauce to save time and my own sanity.
- Corn Tortillas. Traditionally enchiladas are made with corn tortillas but if you prefer flour feel free to use what you like. You will need less flour tortillas since they are a bit bigger than the corn ones.
- Cheese. Who doesn’t love cheese on their enchiladas? This is by far the most flexible part. I normally go with a Mexican cheese blend but feel free to use what you have on hand.
How to make Turkey Enchilada Casserole
- Pre-heat your oven to 350 degrees.
- Start by placing your ground turkey into a skillet over medium-high heat.
- Cook the turkey for 5 minutes until it starts to brown.
- Add your veggies of choice into the mix and continue cooking.
- Drain and rinse the black beans and add to the turkey mix.
- Add in the enchilada sauce to the turkey and beans and simmer for 5 minutes.
- In a 11x 9 casserole dish, coat the bottom with a layer of enchilada sauce and layer the corn tortillas on the bottom covering the dish.
- Pour in the turkey mixture on top of the corn tortillas into the dish.
- Layer the top of the mixture with corn tortillas and add more enchilada sauce on top.
- Top the entire dish with cheese.
- Bake in the oven for 5-10 minutes or until the cheese melts.
What can I serve with Turkey Enchilada Casserole?
This meal is good enough to eat on it’s own if you don’t want to add a side. But you can also serve this meal with rice, beans, or my personal favorite tortilla chips and salsa or guacamole.
Don’t forget if you end up having leftovers, you can easily turn this into a bowl meal by adding some sour cream and jalapeños making for an easy lunch.

- 1–2 cups of veggies of your choice
- 1 can black beans
- 1 cup cheese
- 12+ corn tortillas
