If your kids are anything like mine, than one of the first things out of their mouths after school is, “Mom, I’m hungry!”. Please tell me that I am not alone.

So, you are faced with two options.

One, swing through the drive thru. Which is probably not going to be the healthiest of choices. And is not exactly wallet friendly either.

Or two, make a snack when you get home. Which, after you have been running around all day doing a bajillion things, is not exactly at the top of your to do list. Am I right?

That is why you are going to love these peanut butter and banana snack quesadillas. They can be whipped up in a few minutes. And, bonus points for this recipe because it is the perfect make ahead snack idea, and it is freezer friendly too!

Both of my kids, Jasper and Willow seem to reach next level hunger right after school. Anyone else?

And, if I am being honest, everyday at pickup I am already frazzled. I have been doing all the things while they are at school, and here I am being greeted by starving, and frankly speaking, cranky children.

Frazzled mom + hungry kids = not a good combo.

But, I realized that what I was mostly tired of was not the fact that they were hungry. It was that I wasn’t prepared. I did not want to go through the drive thru, but was too exhausted to even think about, let alone create a healthy snack for my kids. Maybe you can relate?

So, I sat down, and got to thinking about an after school snack idea that my kids would love. And, keeping it real, that was easy to make too. Because busy mamas do not have infinite hours to spend in the kitchen.

With that, the peanut butter and banana snack quesadillas were born. And, I think you will love them too.

Using simple ingredients is what truly makes this snack so yummy. The fact that this works great as a make ahead snack, and can be stored in the freezer is what busy mom’s dreams are made of.

Peanut Butter And Banana Snack Quesadillas Ingredients

When it comes to after school snacks, or any snack ideas for kids, you need it to be quick and easy. And, for it to use simple ingredients too.

All of the ingredients used in this recipe should be in all grocery stores. So, you will not have to run around to several places to get what you need. Yay for that!

Here are the ingredients you will need:

  • Burrito sized flour tortillas
  • Creamy peanut butter, or any nut butter you prefer
  • Bananas
  • Unsalted butter or cooking spray
  • Honey
  • Cinnamon

How To Make This After School Snack Recipe

I think the fact that this after school snack idea is so easy to make needs repeating. You will be over the moon excited that this yummy treat can be whipped up in just a few minutes!

We will go over exactly how to make these peanut butter and banana quesadillas ahead of time, and how to freeze them in just a bit.

For now, let’s get started on how to make this delicious snack for kids.

First, you will want to get your skillet warming up on medium low heat. And, then add some butter to the pan.

Next, you will assemble the quesadilla.

Start by spreading the peanut butter on half of the tortilla. Then, you will add in some sliced bananas, and top with a drizzle of honey.

Now it is time to flip the quesadilla. Next, you will want to add a sprinkle of cinnamon to the top. I am telling you, this hint of cinnamon is what makes this peanut butter and banana quesadilla sing. It is so good!

Once the quesadilla has warmed nicely, and you have a bit of a crunch to the tortilla, you are finished.

Allow it to rest for just a couple of minutes, and then cut into 4-6 slices.

How To Prepare This Make Ahead Snack

If you want to stay one step ahead of after school hangry levels than you can totally use this recipe for a make ahead snack idea. I do this all the time. 😉

You will follow all of the above steps, and then place each triangle onto a cookie sheet. Place the cookie sheet into the freezer for about 10-15 minutes. You don’t need the quesadillas to be completely frozen. You are looking for them to hold their shape well.

Once they have settled, and are slightly frozen. Place the quesadillas into a Ziploc bag.

How To Reheat Frozen Snack Quesadillas

When it comes to reheating the peanut butter and banana snack quesadillas, you have two options.

You can either microwave, or reheat them in the oven.

If you reheat in the microwave: Heat in 30 second intervals. Obviously you want the after school snack to not still be cold, but you also don’t want anyone burning themselves on hot peanut butter and bananas either. I have found that 1 1/2-2 minutes is our microwaves sweet spot.

If you reheat in the oven: Heat the quesadillas wrapped in foil on 350 for about 10-15 minutes. Again, be sure to check that they are not too hot before your kiddos dig in.


Perfect On The Go Snack

These peanut butter and banana quesadillas also makes a great snack for kids on the go.

They travel great, and are a wonderful handheld and portable snack for families with busy schedules.

PRO TIP: If you really want to be on top of your game, heat these up before you leave for school pickup. That way you can easily hand them off to the kids as an after school snack before they even mention that they are hungry.

Description

Ingredients

Scale
  • Burrito sized flour tortilla
  • 2 tbsp creamy peanut butter
  • 1/2 banana
  • 1 tbsp honey
  • pinch of cinnamon
  • 1 tbsp unsalted butter or cooking spray

Instructions

  1. Heat skillet on medium low heat, and add butter or cooking spray to skillet.
  2. Spread peanut butter on one half of tortilla and add to pan.
  3. Add bananas evenly on top of peanut butter, and drizzle with honey.
  4. Allow the tortilla to heat for 1-2 minutes.
  5. Fold tortilla in half.
  6. Sprinkle cinnamon on top of tortilla.
  7. Allow to heat on both sides, until warm and slightly browned.
  8. Let quesadilla rest for a few minutes to cool.
  9. Cut into 4-6 triangles.
