Buffalo Wings Backstory

Okay, confession time! I was not always a fan of buffalo wings. Face palm

Yep, you read that right. I mean I tried various wings, and I just could not get on the bandwagon. Some were too vinegary for my liking. Others were not spicy enough. And, let’s not even go there about the soggy wing situation. Frankly, a soggy wing is just a sad wing!

Cut to my pregnancy with Jasper. During football season, my husband decided that he wanted to make some buffalo wings. I thought to myself ‘Yay! I have to force myself to eat these things now.’ Insert eye roll Because of course, I am not going to hurt my sweet husband’s feelings.

Then, the strangest thing happened. The smell from the kitchen was exciting me to no end. And, then truth time came, and I tried one.

Y’all! Y’ALL!!! These wings were out of this world delicious.

They were perfectly crispy! The sauce was absolute perfection. Not too vinegary, and just enough kick. From that day on I was a buffalo wings believer!

I think all of you will agree with me, and my reformed buffalo wing spirit. Dare I say it is the best ever? Actually yes I will say it! This is hands down the BEST buffalo wings recipe!

How To Make Buffalo Hot Wings?

And, not just any buffalo wings, but crispy buffalo wings. Well my friends the secret is in the breading. Yes, obviously they are fried. But, we all know that fried does not always equal crispy. Know what I am saying?

The key to magical crispiness in this wings recipe is using cornstarch. And, getting the oil up to the ideal temp!

Then, you will toss those fried wings in a delicious homemade hot wing sauce. Next, devour them! See easy peasy! 😉

Okay maybe there is a little more to it than that. But, first we start with the sauce!

Buffalo Hot Wing Sauce

What are wings without the perfect sauce? I mean really?

Homemade hot wing sauce is super easy to make! And, it makes all the difference between a ‘meh’ wing, and an ‘Oh my gosh this is the best wing I have ever had!’ wing.

This wing sauce has a buttery smooth and spicy punch that will knock your tastebud’s socks right off! lt has the perfect spicy to vinegary balance too.

This sauce uses only 5 simple ingredients: like Frank’s hot sauce, tabasco, a little brown sugar, some apple cider vinegar, and butter.

You will melt the butter on low heat, and then add the rest of the ingredients to your pot. Let it all jive for a few minutes, and then boom! You are done!

Buffalo Wings Recipe

Moving right along to the star of the show! The buffalo wings recipe! Whoop whoop. Yes I whooped. No, I am not ashamed.

First things first! You will need to rinse your chicken, and pat dry with a towel

While the chicken is hanging out, go ahead and get your oil up to temp in your fryer. You want that oil to be at 360.

Next, you will combine the breading for the wings. And get those babies tossed in the spicy breaded goodness!

Are you ready to get these bad boy wings in the fryer? Of course you are! Let’s do this!

We typically make these wings for either ourselves, or for parties. Especially football watching, and Super Bowl parties! For this recipe I used about 5lbs of wings and that easily fed 6 people.

Also, a frying tip. Do not overstuff your frying basket. Yes, frying a big batch of wings takes some time. But, it is amazingly worth it. Trust me!

I have found that about 6 wings per batch fry up pretty perfectly!

PRO TIP: These wings should fry for 10-12 minutes. Even though you will stare at the delicious fried goodness longingly, and want to remove them sooner. DO NOT remove them before 10-12 minutes. It is one of the secrets to delicious crispiness!

Once you have finished frying all of your wings. It is time to coat them in the buffalo wing sauce! Just pour the sauce on, and make sure to mix the wings thoroughly.

Ingredients

5 lbs chicken wings, wing pieces, drums, or flats

vegetable oil for frying

For the buffalo wing breading:

2 tsp cayenne pepper

2 tsp ground black pepper

2 tsp salt

2 tsp garlic powder

2 tsp onion powder

6 tsp cornstarch

Hot Wing Sauce:

8 tbsp (1 stick) unsalted butter

1 c hot sauce (I use Frank’s Hot Sauce)

4 tbsp Tabasco sauce

3 tbsp dark brown sugar

4 tsp apple cider vinegar


Instructions

For the hot wing sauce:

  1. Melt butter in saucepan on low heat.
  2. Add hot sauce, tabasco, brown sugar, and apple cider vinegar.
  3. Whisk all ingredients and combine well.
  4. Remove sauce from heat, and set aside for later.

How to make buffalo wings:

  1. Rinse chicken pieces and pat dry with paper towels.
  2. Preheat oven to 200 to keep wings warm between batches.
  3. Line baking pan or dish with paper towels to absorb excess oil.
  4. Heat oil in fryer to 360.
  5. Combine cayenne pepper, black pepper, salt, garlic powder, onion powder, and cornstarch into large mixing bowl.
  6. Place dried wings in bowl with breading mix.
  7. If bowl has lid then shake until wings are coated. If bowl does not have lid, then toss wings until they are coated well.
  8. Fry wings for 10-12 minutes per batch. (Approximately 6 wings per batch)
  9. Place fried wings on paper towel lined baking dish, and then place in 200 oven to keep warm.
  10. Continue steps 8 and 9 until all batches are complete.
  11. Remove paper towel from baking dish, and pour sauce over wings.
  12. Mix wings thoroughly to ensure that they are well coated with sauce.
  13. Devour those bad boys!

Notes

Be sure to add in some fresh veggies, and ranch or blue cheese for buffalo wing dipping deliciousness.
