What you’ll need to make Slow Cooker Taco Soup

To start, you will need the following ingredients:

  • Your choice of protein. Typically when making this recipe I use a ground chicken or turkey. However, you can also use shredded chicken or grab a rotisserie chicken to shred and toss in.
  • Peppers & onions. Personally I hit the EASY button for this and use a frozen bag of peppers and onions. Feel free to use the fresh if that fits your lifestyle better! No shame over here making life easier!
  • Beans. You can use any beans you have on hand or that your family enjoys. I typically add black beans but you can also use kidney or pinto.
  • Diced tomatoes. A regular can of diced tomatoes works great for this recipe but if you are feeling spicy, grab the can with green chilies, or add jalapeño to this dish. Remember it’s easier to add later vs making it too spicy to eat.
  • Salsa. Nothing special here! Grab your favorite jar of salsa and toss that into the mix with everything else. Keep in mind the level of spice you are choosing with the salsa or you can get a corn salsa mix for an added bonus!
  • Taco seasoning. You can use any taco seasoning you like. Whether you prepare your own mix with chili powder, cumin, paprika, salt &pepper, garlic powder, & onion powder OR you buy it from the store, choose what you enjoy!
  • Extras. You may want to have some shredded cheese, sour cream, chives, or avocado ready to top your taco soup with.

How to make Slow Cooker Taco Soup

  1. In a skillet over medium heat, brown the ground beef or chicken until it is fully cooked.
  2. Add the beef to the crock pot and layer in the diced onions & peppers.
  3. Add your beans of choice, diced tomatoes, and taco seasoning to the crock pot. Stir to combine.
  4. Pour in the salsa.
  5. Set the crock pot on low for 6 hours and enjoy!

Ingredients

  • 1 pound ground beef or chicken
  • 1 bag of frozen peppers & onions
  • 12 cans of beans of choice, drained and rinsed
  • 1 can diced tomatoes. Diced green chilies optional.
  • 1 packet taco seasoning
  • 1 jar of salsa

Instructions

  1. In a skillet over medium heat, brown the ground beef or chicken until it is fully cooked.
  2. Place the beef at the bottom of the crock pot and add the frozen bag of peppers & onions.
  3. Add your beans of choice, diced tomatoes, and taco seasoning to the crock pot. Stir to combine.
  4. Pour in the jar of salsa.
  5. Cook in the slow cooker on low for 6 hours.
  6. Enjoy and top with your choice of sour cream, shredded cheese, avocado or tortilla strips.
